There's a lot of great exploring in the Extension area and 90% is stock friendly.
You'll find all sorts of abandoned mines, there's a giant crack in the earth that they call the abyss, you can access Whiskey lake and it's all close to pavement if anything ever goes wrong you can walk out in a short time. There's also some great hiking in the area for you and the family "Extension ridge trail" it's all marked and not a real hard hike.
You can also go up Nanaimo lakes road towards Barsby lake, also stock friendly, there's some good exploring to do around that area as well.
If you want to go to the North end, go up Weigles Road past the motocross track, there's Amonite falls which is really cool and quite an easy hike, also some decent exploring to do in the area that a stock vehicle could partake in.
The snow is only 3-4" and the roads are pretty well traveled so it's packed down, it's and easy go.
