Shawnigan or mill bay are about as close as you're going to find decent wheeling. To be honest though, most of the trails I know in those areas are fairly difficult and you might not make it without a lift and tires. Your best bet might be to head past Duncan and up Mt Prevost rd. You'll have to check if the gate is open, but I think it should be this time of year. It's a basic logging road but it gets a fair amount of altitude with some nice views of the valley, and there's a lot of room to explore up there.
Been dying to get back up there at some point. Great camping spot. You may run into some impassible gates right now, as I know much of that area is currently closed off. Let us know how it goes though and take pictures if you're able to get up there!
Oh yea they do make those to mount a full size winch. I've never actually seen one in action though I don't see why it wouldn't work? I guess you'd have to run heavy wiring to both the front and back, and that may be a bit of a pain. Other than that though it should work. I would probably still go with a bumper mounted winch, but that's just personal preference.
